Fresh Shiitake mushrooms can be kept in an airtight container in the refrigerator for up to 14 days, or in the freezer for 10-12 months.

Fresh Shiitake mushrooms are often packed loose with both their cap (pileus) and short stem (stipe) intact.

Shiitake’s signature smoky aroma and flavor make these mushrooms ideal for flavoring soups and stir-frys, although they also stand out when roasted or simply sautéed. Tip: Be sure to remove the tough woody stem but don’t dispose of it - save them and use them to flavor your next broth.
